What’s your family’s favorite style dishes?!


Our fam is OBSESSED with finding the BEST Chinese and Thai food restaurants, so much so we’ve been creating our OWN at home!


In full disclosure, I didn’t eat it due to , but the fam ATE it up! Leftovers were gone next day, no twisting anyone’s arms to eat it


Our family uses recipes as “guides”, so things were doubled/tripled, or left out.

Chicken Pad Thai - serves 2


What you need:

4 oz flat rice noodles

3 tbsp olive oil, divided

1/2 lb chicken breast, sliced into thin strips

1/2 red bell pepper, halved and thinly sliced

3/4 cup carrots shredded

2 garlic cloves, minced

1 egg, beaten

1 green onion, chopped

1/4 cup unsalted peanuts, chopped

2 tbsp cilantro leaves, chopped


For the Sauce

2 tbsp packed brown sugar

1 tbsp low sodium soy sauce

1 tbsp fish sauce

1 tbsp lime juice

1 tbsp rice vinegar

1 tbsp smooth peanut butter

1 tbsp Sriracha

1/4 tsp ground ginger

1/8 tsp pepper


What you gotta do:

Prepare rice noodles according to package. Rinse in cold water, drain, and toss in 1 tbsp olive oil. Set aside.


Add all sauce ingredients to a medium bowl, Whisk together, set aside.


While rice noodles are soaking, heat 1T olive oil in large nonstick skillet over medium-high heat. Once hot, add chicken, cook 3-4 min's until cooked through. Transfer to a plate while you cook veggies.


Heat 1T olive oil over in same skillet, heat over medium-high heat. Add bell peppers, sauté 1 min. Add carrots and garlic, sauté 1 additional min. Reduce heat to medium, pour beaten egg over vegetables and cook, stirring constantly, just until scrambled.


Add sauce and noodles, increase heat to medium-high. Toss until evenly combined, continue to stir and cook for 1-2 min's, don't let noodles overcook. Stir in chicken, green onions and peanuts, heat through.
