My fam is obsessed with ice cream so for fun, so decided to try my hand at making an ice cream cake! Other than needing to freeze each layer for 15-30 mins which is time consuming, they’re super easy to whip up!
I combined two of their ice cream favorites - chocolate and cookies n cream, along with hot fudge, homemade whipped cream, and of course, sprinkles! All on top of an oreo cookie crust. This is one you’ll want to make ahead of time as it takes 12 hours to set.
Oreo Ice Cream Cake
What you need:
36 Oreos (1 standard package)
1/2 cup unsalted butter, melted
1 quart chocolate ice cream, softened
1 quart your choice flavor ice cream, softened
1.5 cups hot fudge
Whipped Cream:
1 cup heavy cream
2 Tbsp confectioners’ sugar
1/2 tsp pure vanilla extract
sprinkles
What you gotta do:
For the crust, toss oreos into a food processor or blender, pulse the whole Oreos into a fine crumb. Stir cookie crumbs and melted butter together, then press into a 9×13 pan.
Make sure it is very tightly packed - Freeze 15 min’s.
Take softened ice cream for the first layer, place in a bowl and stir to get rid of any frozen lumps. You want it to be as smooth as possible. Then spread on top of frozen oreo crust. Freeze 15-30 min’s
Begin working on ice cream flavor #2, place in a bowl, stir to get rid of any frozen lumps. Carefully spread on top of frozen ice cream. Freeze 15-30 min’s
Next spread the hot fudge on top of frozen ice cream layers. If you have to heat it, less is more, you want it just warm enough to be spreadable. It’ll begin to mesh with the ice cream which is ok. Freeze 20-30 min’s
Make the whipped cream, then spread on top of the hot fudge layer and top with sprinkles!
Freeze for at least 12 hours beforehand. My kiddos dug in around hour 6 and it was still too gooey.
Use a sharp knife to cut, making sure you are cutting into the crust. Keep leftovers in freezer.
