The very first time I ever tried to meal prep… I cried from being overwhelmed!! I made the most BORING food eva. I wanted nothing to do with it and tried to tell myself I was destined to feel/look like a marshmallow. BUT… then I remembered I would legit lose my mind if my girls ever gave up that easy on, so I committed to learning HOW to cook meals that were GOOD and on the go easy peasy.
Before I knew it, I was making gourmet meals for my fam bam. The kids were BEGGING me to eat my lunches, I have to double batch this meal b/c Kiley will eat it daily. Hubs coworkers were peeking in to see what new creations he had. No more stopping for fast food or hubs hitting up the vending machines saving us $$.
Yes! It took time to get my system in place and LEARN. But, its HELLA WORTH the time it takes to learn b/c this skill YOU can use FOREVER!!
This weeks prep: orange chili chicken rice bowls served with roasted asparagus part? 30 mins from start to finish. This meal is flavor PACKED!
Simple Chili Orange Chicken
What you need:
1. Pick your choice of protein and cook it! (I used chicken!) - roughly 1 1/4 lb cut into 1" pieces
2. Pick your fave veggie, fix it how you like! I used asparagus and roasted it at 425 w/ olive oil for 15 min's
3. Make 1 cup brown rice
What you gotta do:
1 cup orange juice
1/2 cup chili garlic sauce (in the Asian food section- red sauce with green lid)
1/3 cup low sodium soy sauce
1/3 cup sugar (I just use organic but you could use coconut sugar too)
2 tbsp sesame oil
1 tbsp corn starch mixed with 1 tbsp water
1 tbsp apple cider vinegar or rice vinegar
