Found this hidden gem in the breakfast folder from 4 years ago when we started on this journey.
At 3pm kids we’re all over me asking for it, hubs walked in the door from work diving in.

Oatmeal Fruit Bake
What you need:
Dry ingredients
3 cups old fashioned oats
¾ cup brown sugar
1 ½ tsp baking powder
1 tsp cinnamon
½ tsp salt
Wet ingredients
2 eggs, lightly beaten
2 ½ cups milk
1 tsp pure vanilla extract
4 tbsp unsalted butter or coconut oil, melted
2 cups berries (I used frozen - sliced for larger berries)
What you gotta do:
Preheat oven to 350°F.
Spray a 2 ½ quart baking dish with coconut oil spray.
Combine all dry ingredients.
Spread ½ oat mixture in the baking dish, top with ½ berries, then top with the remaining oat mixture.
Whisk the eggs, milk, vanilla, and melted butter. Pour over oat mixture.
Top the oats with remaining berries.
Bake uncovered for about 35-45 min's, until oats are tender / mixture is set.
Serve immediately or cool, then cover and refrigerate for later.
