Banana Chocolate Chip Pecan Baked Oatmeal Muffins



Have you ever run races and see those piles of fruit at the end for runners!?


Wellllll we have a PILE of said banana and oranges.


Even with gabby being wasteful, baking, we’ve barely made a dent in the box.


Banana Chocolate Chip Pecan Baked Oatmeal Muffins

  • 2 cups oats

  • 1 tbsp brown sugar

  • 1 tsp cinnamon

  • 1 pinch nutmeg optional

  • ¼ tsp salt

  • 1 cup mashed bananas - about 2 large

  • ⅔ cup milk

  • 2 large eggs

  • 2 tbsp melted coconut oil

  • ¼ cup honey

  • ⅓ cup chocolate chips

  • ⅓ cup chopped pecans (or whatever you have/prefer)

  1. Preheat the oven to 400°F. Grease a 12 cup muffin tin.

  2. Whisk together the oats, brown sugar, cinnamon, nutmeg, and salt in large bowl.

  3. Whisk together all remaining ingredients (leave out chocolate chips and pecans) in a large bowl.

  4. Pour wet into dry ingredients, stir well, fold in chocolate chips and pecans.

  5. Spoon into muffin cups.

  6. Bake 20 min's or until toothpick comes out dry.

Makes roughly 12 servings.
