Clean Eating Coconut Shrimp

• 1 lb fresh shrimp

• 1 cup unsweetened coconut flakes

• 1/2 cup whole wheat panko crumbs

• 1 egg

• 1/2 cup unsweetened almond milk

Preheat oven to 425.

In one bowl, beat eggs and milk.

In another bowl - combine crumbs and flakes.

Dredge shrimp through milk and eggs, then coat in flake mixture.

Lay shrimp on a baking sheet, bake for 12 min's.

Enjoy those glorious little bites.
