Pumpkin Muffins



Normally I'm not a pumpkin fan, but these Pumpkin muffins are pretty good!

Hubs ate 3 alone today😂😂

Though they are gluten free, refined sugar free, oil free, and dairy free muffins, they're tasty! Even better if you don't forget the chocolate chips like I did!!

Pumpkin Muffins 1 cup pumpkin purée 2 eggs 1/4 cup unsweetened almond or cashew milk 1/2 cup pure maple syrup 4 T almond butter 1 T vanilla extract 2 1/4 cup Rolled Oats 1 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/2 tsp salt 1/2 cup dark chocolate chips Preheat oven to 350. Combine all the wet ingredients together in a blender or food processor. Layer dry ingredients (except chocolate chips) on top. Blend until mixed up well. Stir in chocolate chips. Pour evenly into 12 count muffin tin. Use liners or spray the pan! Bake for 22 minutes.
