
After months of searching, I've finally found a Banana Bread recipe that's not only gluten free....but I love it!! Little higher in fats, but still fits within our guidelines!
Our favorite way to prepare it is with walnuts and chocolate chips. Anyone who has tried it didn't realize it was a "healthy" version!
Banana Bread
serving size is 1/8th 4 bananas 4 eggs 1/2 cup natural peanut butter 4 tablespoons melted coconut oil 1/2 cup coconut flour 1 tablespoon cinnamon 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon vanilla extract Combine the first 4 ingredients in a blender and blend until smooth. Add the rest of the ingredients and blend well again. Here you have two options. You can add the batter to a loaf pan. Or you can add the batter to 8 mini loaf pan's and bake them. Bake at 350 degrees for 35-40 mins.
