When your kids go crazy chopping up all your peppers and Stuffed Peppers on the menu, you improvise. Stuffed Peppers(When your kids are not in a chopping frenzy) 5 bell peppers (big ones!) 1 pd lean ground turkey or beef 2 14.5 oz. cans of diced tomatoes 2 garlic cloves, minced 1 large yellow onion, diced (optional) 1/2 cup Quinoa Shredded mozzarella cheese sprinkled on top. 1 tsp each of Italian seasoning, cumin, garlic powder, onion powder salt & pepper to taste. 1. Cook quinoa according to directions. 2. Meanwhile cook turkey or beef with onion, once done, add in seasonings and tomatoes. Mix in quinoa. 3. Prep peppers, chop in 1/2, pull our the ribs and core. Rinse off the seeds. 4. Stuff peppers with filling. 5. Sprinkle with cheese. Bake at 375 degrees for 30 mins, depending on your oven. Filling should be heated all the way through. 1 Red, 1/2 Yellow, 1 Green, 1/5 Blue.
