Fruit Baked Oatmeal



Life is busy as a homeschooling Mama, so I'm always looking for new recipes for the family that will help make the morning routine just a bit less hectic. This oatmeal will leave your house smelling like cinnamon goodness. It's super easy to make, and the ingredients don't cost much either! The best part is you can modify this recipe so easily to fit your taste!

Disclaimer: I do not count the 2 cups of almond milk or egg since it’s divided up into so many servings. Do this plan how you like while staying healthy.

Fruit Baked Oatmeal

Prep time: 5 mins

Cook time: 35 mins

Total time: 40 mins


Ingredients

  • 2 cup Old Fashioned Oats

  • 1 tbsp vanilla extract

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • 1 cup raspberries(or strawberries/blueberries)

  • 1 cup chopped nuts (I used walnuts)

  • 2 cups unsweetened Vanilla Almond Milk

  • 1 egg

  • 1 banana, sliced

  • ¾ cup natural maple syrup

Instructions

  1. Preheat oven to 350 degrees.

  2. Spray a 9×13 pan with coconut oil spray.

  3. Mix together the oats, syrup, baking powder, ½ of the nuts, cinnamon and ½ of the raspberries.

  4. In another bowl mix the egg, vanilla and milk.

  5. Spread the oatmeal mix into the pan, make sure it’s even.

  6. Pour the milk mixture over the oat mix.

  7. Top with remaining ½ raspberries & nuts and sliced bananas.

  8. Bake for 35 minutes
